When it comes to oatmeal, I consider myself an expert. A connoisseur if you will!

From classic overnight oats and creamy blended overnight oats, to chocolatey baked oatmeal or fruity baked oatmeal I am a pro. I even have you covered for all the different seasons! Like with peachy summer stovetop oatmeal or fall pumpkin pie oatmeal.

But let’s not forget about baked oats! I mean that is why we are all here. The social media sensation of blended, then baked oats is my most recent favorite way to enjoy the hearty breakfast whole grain.

This specific baked oats recipe might just be the best yet! It has the warm, sweet flavor and soft, moist texture of banana bread. But besides being banana bread in breakfast form, Baked Oats with Banana are:

Banana bread baked oatmeal calls for only a handful of healthy ingredients! They include perfectly ripe and brown bananas (for ultimate sweetness) and pantry staples you probably already have.

Here is the exact ingredient list:

  • Banana: The base of this single serving breakfast is one banana! Brown, spotty, overripe bananas will work best. You’ll use one half mashed into the batter and one half sliced on top.
  • Oats: Next up you will need oats! I recommend old-fashioned oats, but quick oats and rolled oats should do the trick too. When blended up the oats become an oat flour, so the difference between the types is sort of eliminated.
  • Milk: For my liquid in this breakfast recipe I used unsweetened vanilla almond milk. It is always my go-to! But any non-dairy milk or even dairy-filled milk will work. Coconut milk, soy milk, oat milk, skim milk, or whole milk … anything you’d like!
  • Applesauce: A spoonful of applesauce adds a bit of extra moisture and sweetness to these hearty oats.
  • Pure Maple Syrup: To sweeten up this breakfast wonderfully, you’ll add pure maple syrup. It is a rich and delicious refined sugar free sweetener. Alternatively, you could use other liquid sweeteners like honey or agave nectar. You could even try a granulated sweetener … like brown sugar!
  • Cinnamon & Vanilla:You’ll ground cinnamon for warm flavor and vanilla extract for extra delicate sweetness.
  • Baking Powder: Baking powder helps give these oats that cake-like, soft, and fluffy texture!
  • Chocolate Chips: Lastly, as any banana bread lover knows … banana bread is best with chocolate chips. So we’re adding them to this banana oatmeal too!

How To Make Banana Bread Baked Oats

Baked oats are an incredibly easy recipe to make! All you need is about 5 minutes of active prep and under 30 minutes in total.

The process requires 3 simple steps: blend, bake, and enjoy!

Step 1: Blend. Add 1/2 of the banana, almond milk, pure maple syrup, vanilla extract, oats, cinnamon, baking powder, and a pinch of salt to a high speed blender. Blend until smooth, but don’t over-mix.30-45 seconds should be just enough!

Step 2: Bake. Pour the blended oat mixture into a small baking dish or ramekin. Slice the other 1/2 of the banana. Top with chocolate chips and the banana slices. Bake for 20 minutes.

Optional Variations & Dietary Adaptions

I think this banana baked oatmeal for one is absolutely scrumptious as is, but there is always room for adaptions and changes to make it perfect for you!

  • Gluten Free: This baked banana oats recipe is incredibly easy to make gluten free. Just use certified gluten free oats and you will be set.
  • Vegan: Making this recipe vegan is a walk in the park too! It is pretty much plant based already all on its own. You just have to make sure you are using dairy free chocolate chips.
  • No Banana: This nutritious breakfast is obviously a banana heavy recipe, but do not worry if you don’t have any on hand. You can replace the 1/2 banana mixed into the batter with about 1/4 cup of applesauce. Or check out my recipe for Baked Oats without Banana!
  • Mix-Ins: There are endless additional mix-ins you could add to these easy banana bread oats. My favorites would be chopped nuts or fresh berries!

Expert Tips

Use a high speed blender! I like to use a high speed blender to make this recipe (and all my blended baked oats recipes) for a couple of reasons. Mainly, I find that these powerful blenders are the best at blending the ingredients into a smooth batter, without needing to over-mix. I use this hand held / portable blender, and love it! It would be great for making a fruit smoothie too.

Do not over-blend! This tip goes along with my previous one. I find that over-blending prevents a nice and beautiful rise on these oats. Blending for just about 30 seconds will help achieve that fluffy texture and domed top.

Grease the ramekin! Spray the baking dish for these oats with cooking spray for easy cleanup. You won’t have to worry about any bits getting stuck to the bottom.

Enjoy with all of your favorite toppings! Adding a smear of peanut butter, drizzle of honey, and more fresh fruit on top makes these already delicious baked oats even more delicious. Ugh, SO good!

Yes, in my opinion this recipe is a healthy breakfast option! It is full of whole grains, complex carbohydrates, fiber, and more. Plus if you top it all off with peanut butter and fresh fruit, you’ll get healthy fats and lots of color and micronutrients.

It has pretty much all the makings of a nutritious, good-for-you morning meal that will keep you full and satisfied.

What baking dish should I use for this recipe?

I recommend using about 8 oz ramekin dishes. Like these square or circle ones!

However if you don’t have these, any small baking dish or even oven-safe bowl will do.

I always use old fashioned oats and that is what I tested this recipe with, so that is what I recommend. However, I do believe any type of oats should work besides steel cut oats.
